 Palm Beach Gardens’ BallenIsles Country Club has hired a new Director of Culinary and Executive Chef. Fabian Ludwig now oversees all aspects of the Club’s culinary team, from creating menus for all six of the Club’s restaurants to selecting plating presentation for dishes through to creating delectable masterpieces for all members to enjoy. Having worked in locales across Europe and the United States, Ludwig has proven that it’s not just his background, but the personal touch that he imparts on each dish, that ensured he was perfect for the role. Regarding such, Ludwig said, “The pleasure and reason I started to cook for people 30 years ago is because of the smiles and nodding of the heads. I work for the smiles, to create an experience they can remember.”
Ludwig comes from a storied cooking environment – prior to his time at BallenIsles Country Club, he studied hospitality work and hotel operations at the Hotel Institute. From there, his work took him places such as Fidzer Hof and the New York Marriott Marquis. Describing his cooking style, Ludwig said, “I love to cook dishes you might remember growing up. Dishes that transport you back to good memories, shared during good company or enjoyed while on vacation, these could be simple dishes, but authentic.”
Ludwig’s favorite tip on making a dish special is one that reveals why they’re so irresistible - he imbues a feeling in his meals. “Tell a story - make your guest feel like they are part of the story. You should feel special, you were part of the journey, honor the moment.” Indeed, Fabian mentions how he strives to source ingredients that are local and in season, so that he and his team can tell the “food story” behind the recipe. The secret behind composing that food story? “Choose the best possible product available. The journey should be easy in pairing it with few items, not to take away from the main act. The focus needs to be enhancement of the beautiful product, showcase the natural stage and purity.”
Since his arrival, Ludwig has taken to BallenIsles Country Club quickly. From crafting menus for Evolution, the Club’s globally inspired restaurant, to creating new recipes, he has enjoyed the experience. “All my career I am used to an ever-changing customer base…” Ludwig explained. “In my current position my guests don’t leave after a short business trip or vacation, they live here, some all year round. Feedback comes immediate and often, some would shy away but I engage as much as possible with my guests.”
