Meet Chef Carl Murphy
Chef Murphy has worked in every aspect of the food business since he was a child. His passion for cooking started at family gatherings, where he would help with cooking meals. At age 11, he was introduced to the professional culinary world, helping his cousins set up their catering hall on Staten Island for large events. Growing up around the kitchen, Murphy developed a lifelong passion for cooking and sharing his love through the food he created. Murphy is a graduate of the Culinary Institute of America and has spent most of his career in New York with world-renowned chefs David Burke, Charlie Palmer, and Craig Shelton. He was also the Executive Chef for close to years at Fresco by Scotto’s, a popular family-run Tuscan restaurant just north of New York’s Rockefeller Center.

“In my family, everything revolved around the kitchen,” said Chef Murphy. “When I was young, I would watch and help my great grandmother and my grandfather cook. They would cook a good amount of traditional dishes from Bari, Italy, which has become my favorite cuisine to cook.”

Private Club Dining at Its Finest
As BallenIsles’ Senior Executive Chef De Cuisine, Chef Murphy oversees all of the Club’s a la carte menus. The indoor-outdoor BallenIsles Grille/ Rendezvous Room, also known as “The Big” is known for its gastropub fare, where Members enjoy burgers, salads, pizzas, and ribs while watching the game on the restaurant’s 17 televisions or enjoying the views of the Club’s East Course. Featuring healthy salads, fresh seafood, and pasta dishes, Bistro 105 embraces a creative and seasonal menu, delectably paired with the top international wines. Finally, Evolution is a stylish departure from fine dining with a sleek, sophisticated atmosphere complimented by seasonal, locally sourced contemporary presentations. A special tasting menu includes premier global cuisines with optional wine pairings.

Among all of BallenIsles’ dining venues, Chef Murphy shows his Italian flair the most at Evolution. “I would have to say that Evolution’s small bites are the most fun for me,” said Chef Murphy. “I love bringing my Italian heritage and international influences to life within these small plates, and I look forward to taking this menu to the next level in the upcoming years.”

The Club’s staff also work to ensure that the social event calendars are filled with dining events including Chef’s Table nights, holiday dining events, themed dinners, and Icons of Wine dinners.

“Every day, I try my best to bring the best food to our Members while experiencing different flavor profiles,” said Chef Murphy. “I also work with a great team. Without their help and their patience by my side, I would not be successful.”

It does not take a master chef with decades of experience, however, to cultivate an out-of-this-world meal. Chef Murphy is consistently sharing secrets to some of his favorite dishes to help Members create their favorites at home. “Today, I want to share my simple Bolognese sauce: diced onion, diced fennel, diced carrots, diced pancetta, smashed garlic, oil, chopped meat, chopped pork, ground sausage, red wine, milk, and San Marzano tomatoes.”
